In today's fast-paced world, finding the time to prepare a wholesome meal can be challenging. However, with a little creativity and simple ingredients, you can create a delicious and healthy dinner in no time. Let us explore an easy recipe that requires just 25 minutes to prepare, satisfying your taste buds and nourishing your body.
Ingredients:
- 2 skinless boneless chicken breasts
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 2 cloves of garlic
- 2 tablespoons olive oil
- 1 tablespoon dried Italian seasoning
- Salt and pepper to taste
1. Start by preheating your oven to 400°F (200°C). While the oven is heating up, prepare a large baking sheet by lining it with parchment paper.
2. Rinse the chicken breasts thoroughly under cold water and pat them dry with a paper towel. Slice the chicken breasts into thin, even pieces.
3. Season the chicken slices with salt, pepper, and dried Italian seasoning, making sure each piece is coated evenly.
4. Dice the zucchini, red and yellow bell peppers, and red onion into bite-sized pieces. Crush the garlic cloves and set aside.
5. Heat a large skillet over medium-high heat and add one tablespoon of olive oil. Once the oil is hot, add the crushed garlic and sauté for approximately 30 seconds until fragrant. Be careful not to burn the garlic.
6. Add the chicken slices to the skillet and cook for 4 to 6 minutes, or until they are browned and cooked through. Set them aside on a plate.
7. In the same skillet, add the remaining tablespoon of olive oil and the diced vegetables. Sauté for 6 to 8 minutes or until the vegetables are tender yet still vibrant in color.
8. Transfer the sautéed vegetables onto the prepared baking sheet and spread them out evenly.
9. Place the chicken slices on top of the vegetables on the baking sheet.
10. Bake the chicken and vegetables in the preheated oven for approximately 10 minutes or until the chicken is fully cooked, and the vegetables are slightly caramelized.
11. Once cooked, remove from the oven and allow it to cool for a couple of minutes.
12. Serve the delicious chicken and vegetable medley hot, and enjoy a healthy dinner that requires minimal effort!
Conclusion:
In just 25 minutes, you can whip up a mouthwatering dinner that is both nutritious and delicious. This simple yet flavorsome recipe combines the convenience of quick cooking with the health benefits of fresh ingredients. So, the next time you're pressed for time but still desire a wholesome meal, this recipe should be your go-to choice.
